Raspberry Cream

Hey everyone, Hope you all had a great day today. I went to visit my grandmother today and will I was there I was going through some of my old stuff. I stumbled across an old cookbook that my sister & I made up. We used to cook dinner for my grandmother, aunt & uncle. I decided to post on of our favorite desserts to make. It’s simple and great to make with the kids, or if they are old enough, to let them make alone. Best of all it is delicious. Hope you all enjoy it.

Raspberry Cream

1 pkg of raspberry flavored gelatin (or any flavor you choose)

1 cup of hot water

1 pkg of unthawed frozen raspberries (or any fruit you choose)

1/2 pint of vanilla ice cream

Dissolve gelatin in hot water.

Stir in fruit & ice cream.

Refrigerate until set, about 20 minutes.

Spoon into serving dishes.

Store any leftover in the refrigerator.

Makes 6 servings.

Creme De Menthe Brownies

Hey everyone, Hope you are all having a good day. Mine wasn’t too bad. Tonight I decided to post a recipe. This was given to me by a friend. You can check out her other recipies here.

Creme De Menthe Brownies

1 c. sugar
1/2 c. butter
4 eggs
1 c. flour
1/2 tsp. salt
1 (16 oz) can chocolate syrup
1 tsp. vanilla

Second Layer:

2 c. confectioners sugar
1/2 c. melted butter
4 tbsp. creme de menthe

Top:

1 c. chocolate chips
6 tbsp. butter

Cream 1 c. sugar and 1/2 c. butter and add next 5 ingredients.

Pour into a greased and flour pan.

Bake at 350 degrees for 30 minutes.

Cool.

Mix second layer and spread over cooled cake. In double boiler melt chocolate chips and 6 tbsp. butter and spread over brownie cake.

Chocolate Chip Ice Cream Pie

Hi everyone, today I am going to post  another recipie that my friend gave me. Hope you like it. It is amazing. You can check out her other recipies here

 Chocolate Chip Ice Cream Pie

1/2 c. chocolate syrup
1/3 c. semisweet chocolate chips
2 c. crisp rice cereal
1/4 c. sour cream
1 qt. chocolate chip ice cream, softened

Coat bottom and sides of an 8″ round pie pan lightly with butter.

Combine chocolate syrup and chocolate chips in a small microwave glass safe bowl.

Microwave on HIGH until hot, about 40 seconds.

Stir until smooth.

Reserve 1/4 c. of the chocolate mixture.

Combine remaining chocolate mixture and cereal in a medium bowl and mix to coat the cereal.

Press mixture over the bottom and up the sides of the pie pan.

Freeze until firm, about 25 minutes.

Combine reserved chocolate mixture and the sour cream in a small bowl and mix well.

Spread half the ice cream in the pie pan.

Drizzle with half of the sour cream mixture.

Top with remaining ice cream and drizzle with remaining sour cream mixture.

Freeze pie, covered until firm.

Honey Orange Chicken

Hello all, well I had a great birthday yesterday. My fiancee cooked dinner for me. Some of the girls from work gave me a cake. It was a good day. This was my birthday dinner, that my fiancee cooked for me. It was a recipe given to me from a friend. Check out more of her recipes here.

 Honey Orange Chicken

6 skinned Chicken Breasts, cut in half
6 oz. can frozen orange juice
1/4 c. honey
3/4 c. bread crumbs
1/2 c. flour
1 tsp paprika
1/4 tsp. thyme
1/2 tsp. salt

Defrost orange juice. Combine the undiluted orange juice and honey in a dish. Mix bread crumbs, flour, paprika, thyme and salt in sep. dish. Roll chicken in honey mixture, then bread crumb mixture. Place in greased baking pan. Place in greased baking pan. Bake at 375 degrees for 45-50 minutes.

Caramel Rolls Recipe

Hello everyone, hope you are all having a great day. I know I am. Today I decided to post another recipe. This one was given to me by a friend. They are amazing!!! My family loved them, when I made the the other day.

 Caramel Rolls

Preparation time: 20 minutes. Rising time: 1 hour. Baking time: 20 to
25 minutes at 375 degrees. Yields: 15.

3 to 4 c. all-purpose flour
1 pkg. active dry yeast
1/4 c. granulated sugar
1 tsp. salt
1 c. hot tap water (120 to 130 degres)
2 tbsp. butter, softened
1 egg

FILLING:

1/2 c. granulated sugar
2 tsp. cinnamon
1/2 c. butter, softened

TOPPING:

1 c. brown sugar, packed
1 c. whipping cream

1. In a bowl for electric mixer, combine 1 1/2 cups flour, yeast,
sugar, salt, water, butter and egg. Beat 3 minutes at medium speed.
Stir in enough flour to make dough.
2. Turn onto lightly floured board. Knead 1 minute or just until
dough forms a smooth ball.

3. Roll out to a 15 x 7 inch rectangle.

4. For filling, combine sugar and cinnamon. Spread dough with butter.
Sprinkle with cinnamon-sugar. Roll up jelly-roll fashion from long
side. Seal. Cut into 15 slices.

5. Combine topping ingredients. Spread evenly into a 13 x 9 inch pan.

6. Place dough slices, cut side down, into pan. Let rise until
doubled, 35 to 45 minutes.

7. Bake at 375 degrees for 25 minutes or until golden. Immediately
invert onto serving board. Serve immediately.
